1/2 cup (1 stick) unsalted butter, softened

.5 cups all-purpose flour
“1” cup granulated sugar
“1 tsp baking powder
2 tsp salt
3/4 cup unsweetened cocoa powder, sifted
4 eggs
8 oz. unscented dark chocolate, chopped
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large bowl, whisk together the butter and sugar until light and fluffy. Add the flour, cocoa, baking soda, and salt. Whisk until just combined. In a separate bowl whisk the eggs, one at a time, until combined and pale yellow in color. Scrape down the sides of the bowl as needed. With a rubber spatula, gently fold in the chocolate chips. Pour the batter into prepared baking sheets. Bake for about 20 minutes, or until a toothpick inserted in center comes out clean. Cool completely on a wire rack. To make the cookies: In the food processor, pulse the dry ingredients until smooth. Slowly add the wet ingredients, scraping down sides as necessary. Pulse until the dough is smooth and elastic. Divide the cookie dough into 8 equal pieces. Roll each piece into a ball and place on the prepared cookie sheet. Repeat with the remaining cookie sheets, leaving 1 inch of space between each cookie. Place the cooled cookies on top of each other and bake for 20-25 minutes. Let cool completely before frosting. Notes *I like to use a cookie scoop to scoop out the excess cookie batter. I also like my cookies to be a little bit chewy. If you don’t have a scoop, you can use your hands to press down on them. *If you’re using a double boiler, I recommend using the same amount of water as you would for a regular cookie recipe.
