(CAS) and collagenase (CC) were used to assess the effect of the intervention on the levels of collagen and matrix proteins.

RESULTS:
. The mean collagen levels were significantly higher in the patients with the high-protein diet compared with those with low-carbohydrate diet. In addition, the mean levels for the total collagen were higher than those of those on a low carbohydrate diet (P < 0.05). The levels in serum were also significantly lower in patients on high protein diet than in those who were on low protein ( P < 1.0). , The serum levels (mean ± SD) of total and total protein were lower (p <.05) in high vs low carbohydrate diets. However, there was no significant difference in total or total cholesterol levels between the groups.
